Copal is the name of a tree found in Oaxaca, Mexico, and it also represents a tree resin that is burnt for ceremonial purposes (similar to incense) by the Mexicanos from the old cultures and the new. Copal also symbolizes the art of the indigenous peoples that use the wood to create objects, animals, people; art of nearly every form imaginable!
Copal is burned as an aroma pleasing to the gods. We want the Copal dining experience to be pleasing to our guests!
